Toasted Bacon Sammiches

 
 
 
   Good morning! Today, I took a fresh Brioche Roll, baked yesterday, and sliced it into very thin slices. I fried several slices of home cured bacon then drained most of the oil. leaving a light skim (maybe 2 tablespoons) in the cast iron skillet, I turn the heat to med-low and arranged all the bread slices in the skillet. toasting until golden, I took the cook time to brush bacon drippings on the other side of the bread, then turned them and toasted the other side to golden.
 
 
Remove all the bread and turn off the heat. spread each slice of toast with just a bit of mayo and add bacon, topping with another slice. the only thing missing are a few slices of Home Grown Tomatoes. that will be in about June. but, not too shabby for the last Sunday in April!!
